Cooking with Pia "My Steaka Recipe" at the Abrolhos Islands
Well I am still out here on the pearl farm absolutely beautiful day (well this afternoon was)
I was able to get to the pearl farm and check on the longlines making sure none were broken. On the way we saw a few dolphins, stopped at the south end of Pelsaert Island which has a beach, and of course had to get my feet wet.
On the way home we stopped to catch a fish but no luck today, although we did have fun trying. The wind dropped off and the water turned nearly oily calm so we could see the coral very clear from above.
Lucky we had some fish left over from a couple of days ago. It was a Chinaman Cod.. very underated fish - one of my favourites. So I thought I could the cooking demo on my favourite dish. Now let me tell you about Steakas!
For my whole life I have eaten what we call 'Steakas' this would have to be my all time favourite food. Steakas to me are meat or fish crumbed with a special mix of herbs & breadcrumbs. They taste so good that many people think its a tricky recipe. So for my daily Facebook Live video that I did this evening on our Latitude Gallery Jewellers facebook page I demonstrated how to cook this quick dish. Using this crumb recipe on fish is just so nice and easy. And yes kids love these too, the only fear they have of eating fish is if there is a bone in it. But I don't like bones in fish either but I know how to cut the bones out.
I promised today that I would write the recipe down as phone & internet reception is very limited.
- Fillet of fish (cut into pieces about 1cm thick and around 8cm long)
- 1 and 1/2 cups of breadcrumbs
- 1/2 cup of parmesan cheese
- 1/8 of a cup of parsley (from a jar) but more if it is fresh
- 2 cloves of garlic (crushed)
- Pepper and salt
- 1 egg
- oil to cook
- Combine breadcrumbs, parmesan, garlic, parsley, pepper and salt.
- put egg in separate bowl and whisk with fork.
- Place the fish in the egg before adding to the crumbs (I mentioned in the tutorial you may like to dust the fish with flour first then dip in egg then into the steaka crumb mix - this is optional.)
- Press the crumbs onto the fish.
- Cook in frypan with ab0ut 1/2 cm depth of oil till golden brown
(you can also use this crumb mix on thinly sliced meat)
My favourite way to eat steakas is with beetroot and mayonaise - so Aussie right. Nice in a fresh bread sandwich too.
If you don't use all your crumbs I put in a container in the freezer to use another day.
